
Apple and parsnip soup

Ingredients
- 1/2 tbsp Co-op olive oil
- 1/2 onion, finely chopped
- 2 cloves garlic, finely chopped
- 5cm ginger, peeled and grated
- 500g Co-op British parsnips, roughly chopped
- 2 Co-op British green apples, peeled and roughly chopped
- 400ml vegetable stock
- Handful fresh coriander finely chopped
- Co-op seeded rolls (optional)
Method
- Heat the oil in a large saucepan, add the onion and season Cook for 2-3 mins until softened, then add the garlic and ginger and cook for 1 minute more
- Add the parsnips and apples and turn to coat
- Pour in the stock, bring to the boil, then simmer for 20 mins, until the parsnips are tender
- Top up with more hot water if needed
- Blend until smooth, season to taste, then serve with the coriander sprinkled on top and bread on the side, if you like
