  • 1/2 tbsp Co-op olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 5cm ginger, peeled and grated
  • 500g Co-op British parsnips, roughly chopped
  • 2 Co-op British green apples, peeled and roughly chopped
  • 400ml vegetable stock
  • Handful fresh coriander finely chopped
  • Co-op seeded rolls (optional)


  1. Heat the oil in a large saucepan, add the onion and season Cook for 2-3 mins until softened, then add the garlic and ginger and cook for 1 minute more
  2. Add the parsnips and apples and turn to coat
  3. Pour in the stock, bring to the boil, then simmer for 20 mins, until the parsnips are tender
  4. Top up with more hot water if needed
  5. Blend until smooth, season to taste, then serve with the coriander sprinkled on top and bread on the side, if you like
