Autumnal kale and apple salad


This warm autumnal salad is packed with crispy prosciutto and crunchy apple, perfect for a speedy midweek dinner

  • 160g Co-op wholegrain rice
  • 2 garlic cloves, crushed
  • 2 tbsp Co-op olive oil
  • ½ x 160g pack Co-op sliced curly kale
  • ½ x 80g pack Co-op prosciutto, roughly torn
  • 2 tbsp Co-op mixed seeds
  • 1 tbsp Co-op Fairtrade clear honey
  • Juice of ½ lemon
  • 2 thyme sprigs, leaves only
  • 1 apple, cored and thinly sliced


  1. Cook the rice according to the pack instructions
  2. Meanwhile, put the garlic in a large frying pan over a medium heat with 1 tbsp of the olive oil
  3. Once sizzling, add the kale and cook for 1 minute, until just tender
  4. Using tongs, remove the kale from the pan and set aside
  5. Add the prosciutto and cook for 2-3 mins, or until crisp
  6. Take out of the pan and set aside
  7. Sprinkle in the seeds and cook for 1 minute until toasted
  8. Make a dressing by mixing the remaining oil with the honey, lemon juice and seasoning
  9. Toss the cooked kale, prosciutto and rice together with the thyme, apple and dressing in a large bowl, then serve sprinkled with the toasted seeds
