
Avocado and tomato on toast

Ingredients
- Juice of 1 lime
- 2 tbsp olive oil
- 8 slices wholegrain bread
- 3 ripe tomatoes
- 3 ripe avocados
- 15g fresh coriander leaves, finely chopped (optional)
- To serve, sweet chilli sauce or a fresh chilli, finely sliced (optional)
Method
- Squeeze the lime juice into a bowl, add the oil and whisk to make a dressing
- Toast the bread and thinly slice the tomatoes
- Cut the avocado in half, scoop out the stone with a teaspoon and peel away the skins
- Thinly slice the flesh
- Drizzle 1/2 the dressing over the toast
- Top with the tomatoes, then the avocado
- Drizzle over the remaining dressing and sprinkle the coriander over the top
- Serve with sweet chilli sauce or fresh chilli slices, if you like
