Big Bag Option

Ingredients

  • 6 Co-op Irresistible rashers streaky bacon
  • 100g Co-op British goat’s cheese
  • 4 slices white Co-op Irresistible sourdough bloomer
  • ½ bag Co-op wild rocket
  • 1 medium red gala apple, quartered, cored and thinly sliced

Cupboard ingredients:

  • 1 tsp Co-op wholegrain mustard
  • Freshly squeezed lemon juice

Method

  1. Heat oven to Mark 6 ½ /210°C/190°C fan. Line a large baking tray with non-stick baking paper.

  2. Lay bacon slices on the tray, ensure they don’t overlap and cook for 12-14 mins.

  3. Meanwhile, spread each slice of bread with the goat’s cheese. Season with black pepper. In a bowl, toss the apple slices with mustard and lemon juice until well coated.

  4. Place three rashers of bacon onto two slices of bread. Put all 4 slices of bread on the baking tray, rubbing them on the paper to ensure they get a little of the bacon grease on them. Return to the oven for 3-4 mins, until the cheese is warm.

  5. Place the two bacon-topped toasts onto separate serving plates, add a handful of rocket, then some of the apple slices. Top with the cheese toasts and serve with any remaining rocket and apple.
