Move over brunch, bacon has a new home - at the barbecue. These easy skewers taste great with the punchy sauce

  • 12 rashers Co-op British smoked streaky bacon
  • 2 tbsp Co-op olive oil
  • 1 tbsp cider vinegar
  • 1 green chilli, deseeded and finely sliced
  • 3 spring onions, finely sliced
  • Handful flat leaf parsley, chopped


  1. Take 6 metal skewers and thread each with 2 slices of bacon
  2. Cook on the barbecue for 5-6 mins, until crisp and golden
  3. Alternatively, cook under the grill or on a griddle pan
  4. Whisk together the remaining ingredients to make a dressing
  5. When the bacon skewers are cooked, transfer to a dish and drizzle with the dressing to serve
