
Banana & spinach doughnuts

These baked doughnuts make a great talking point – the spinach is surprisingly good!

Ingredients
- 110g Co-op self raising flour
- 50g Co-op British spinach
- 1 Co-op Fairtrade banana, chopped
- 50ml Co-op semi-skimmed milk
- 50ml Co-op vegetable oil
- 1 tbsp Co-op clear honey
- 1 large Co-op British free range egg
FOR THE ICING - Juice of ½ lemon - 2 tbsp Fairtrade icing sugar
Method
- Preheat the oven to 180°C/fan 160°C/Gas 4
- Put the flour in a large bowl and make a well in the centre
- Whizz the spinach, banana, milk and vegetable oil together in a food processor
- Add the honey and egg, then blend briefly again
- Pour the mixture into the well in the flour, mix together, then spoon into a piping bag
- Pipe into a 6-hole doughnut tin
- Bake for 10-15 mins, until risen and cooked through
- Leave the doughnuts to cool in the tin for 5 mins, then turn out and leave to cool completely
- Once cool, make the icing by adding the lemon juice to the icing sugar, little by little, until you have a thick but pourable icing
- Drizzle over the doughnuts to serve
