  • ½ 250g pack Co-op wholewheat noodles
  • 1 tsp sunflower oil
  • 130g pack Co-op ready to eat flame grilled chicken slices
  • 150g pack Co-op sugar snap peas, sliced
  • 1 red pepper, thinly sliced
  • ½ cucumber, halved and sliced
  • 125g baby corn, sliced
  • Few sprigs mint or coriander
  • 40g Co-op crunchy peanut butter
  • 2 tbsp sweet chilli sauce
  • 1 lime


  1. Bring a medium pan of water to the boil, add the noodles, and cook for 3-4 minutes until tender. Drain well, rinse under cold water and drain again.
  2. Heat oil in a non-stick frying pan, add the chicken chunks and cook 3-4 minutes until golden.
  3. Finely grate the lime zest into a small bowl, then squeeze in the juice. Add the peanut butter and chilli sauce and mix well until it forms a smooth sauce. You may need to add a dash of cold water if too thick. Set aside.
  4. Place the cooled noodles in a large serving bowl, add the chopped veg and most of the mint or coriander and toss through. Scatter over the cooked chicken chunks then drizzle with the peanut sauce. Sprinkle over the remining mint or coriander and serve.
