Beef burgers with onion chutney

  • 175g Co-op oven chips
  • 1 Co-op British egg
  • 200g Co-op Irresistible Hereford beef mince
  • 1 tsp Dijon mustard
  • 2 x Co-op white rolls
  • 2 tbsp Irresistible caramelised red onion chutney
  • Handful rocket (optional)
  • 2 slices tomato
  • 2 tbsp Co-op mayonnaise
  • 1 gherkin, thinly sliced


  1. Preheat the oven to 220C/fan 200C/Gas 7
  2. Set the grill to medium. Spread the oven chips evenly on a baking tray and cook for 20-25 mins, until golden
  3. Meanwhile, whisk the egg in a bowl, add the mince and mustard and mix together
  4. Use your hands to shape the mixture into 2 patties
  5. Add the burgers to the tray with the oven chips for the last 15 mins of cooking, turning halfway through
  6. Towards the end of cooking, split the rolls and lightly toast the cut sides
  7. Spread the base of each with onion chutney and some rocket, if using. Top with the burgers, tomato, mayonnaise and gherkin. Cover with the roll lids and serve with the chips, with extra chutney and mayo on the side, if you like.
