Ingredients
- For the pickle:
- 1 tsp caster sugar
- 2 tbsp white wine vinegar
- 100g radishes, finely sliced
- 1/2 cucumber, seeds removed, peeled into ribbons
- For the sauce:
- 2 tbsp light mayonnaise
- 1 tsp Co-op wholegrain mustard
- For the burgers:
- 1/2 x 500g pack Co-op Irresistible Hereford lean beef mince
- 2 gherkins, finely chopped
- 1 clove garlic, finely chopped
- 2 spring onions, finely chopped
- Freshly ground black pepper
- 2 Co-op Scotch white buns, halved
- Handful Co-op spinach, watercress and rocket salad
Method
- To make the pickle, dissolve the sugar in the vinegar, add the radish and cucumber then set aside
- Whisk together the mayo and mustard
- In a bowl, combine the beef, gherkins, garlic and spring onions
- Season with pepper, form into 2 burgers and chill for 5 mins
- Grill the burgers for 7-8 mins each side, until cooked through
- Toast the buns, then layer with the sauce, salad, burger and pickle
