Ingredients

  • 300g Co-op self raising flour
  • 1 tsp baking powder
  • 125g caster sugar, plus a little extra for sprinkling
  • 150g Co-op low fat Greek style yogurt
  • 150ml Co-op semi-skimmed milk
  • 80ml vegetable oil
  • 1 Co-op British egg
  • 2 tbsp Co-op clear honey
  • 2 tsp vanilla extract
  • 175g Co-op British blackberries
  • 2 Co-op British apples, grated

Method

  1. Preheat the oven to 180°C/fan 160°C/Gas 4
  2. Place paper cases in the12 holes of a muffin tin
  3. Mix together the flour, baking powder and sugar. In a separate bowl, stir together the yogurt, milk, oil, egg, honey and vanilla
  4. Add the egg mixture to the dry ingredients and stir together
  5. Add the blackberries and apple then stir again
  6. Spoon the mixture into the muffin cases, sprinkle over a little extra caster sugar and bake for 25 mins, until the tops are nicely golden
