Buttery brioche buns make these easy fruit tarts, no pastry making is needed

Ingredients
- 4 Co-op brioche buns, halved
- 1 Co-op British free range egg
- 125ml Co-op British semi-skimmed milk
- 1 tsp vanilla extract
- 2 Co-op British pears, cored and thinly sliced
- 150g Co-op British blackberries
- 2 tsp Fairtrade caster sugar
- ½ tsp ground cinnamon
- 1 tsp Co-op Fairtrade clear honey
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Using a 9cm-diameter round cookie cutter, press discs out of the brioche halves and flatten them slightly using your hands
- Whisk the egg, milk and vanilla extract together in a wide shallow bowl, then dip both sides of the brioche discs into the mixture
- Press them into 8 holes of a large nonstick muffin tin
- Arrange the pear slices and blackberries on top
- Mix the sugar and cinnamon, then sprinkle over each tart and bake for 30 mins
- Remove from the tin straight away and drizzle with honey to serve
