Broccoli ‘rice’ salad with houmous dressing

  • 1 small red onion, finely sliced
  • Juice of 1 lemon
  • 250g pack Co-op microwave wholegrain rice
  • 200g pack Co-op Tenderstem® broccoli
  • 3 tbsp Co-op reduced fat houmous
  • 2 tbsp sweet chilli sauce
  • 1 tbsp chopped mint (or 1 tsp dried), plus leaves to garnish
  • ½ red chilli, deseeded and chopped, plus extra to garnish (optional)
  • 1 garlic clove, crushed
  • 1 courgette, shaved into ribbons with a vegetable peeler
  • ½ cucumber, deseeded and shaved into ribbons
  • 6 radishes, finely sliced


  1. Put the onion and half the lemon juice in a small non-metallic bowl, toss together and set aside
  2. Heat the rice according to the pack instructions and set aside
  3. Blitz the broccoli in a food processor until you have grains roughly the size of cous cous
  4. Make the dressing by whisking together the houmous, chilli sauce, mint, chilli (if using), garlic, remaining lemon juice and 2 tbsp warm water in a small bowl until combined
  5. Put the broccoli and rice in a large bowl, pour in the dressing and toss together until evenly coated
  6. Tip onto a serving dish and arrange with the vegetable ribbons, radish and marinated onion
  7. Garnish with a few mint leaves, if using, and extra chopped red chilli, if you like
