
Butterbean and pesto pasta

Got a can of butter beans lurking in the cupboard? Add pesto and a few other basic ingredients to make this speedy dinner

Ingredients
- 150g spaghetti or other pasta
- 1 tsp olive oil
- 100g reduced fat crème fraîche
- 2tbsp green pesto
- 400g tin butter beans
- 1/2 tsp ground nutmeg
- 20g grated Parmesan
- 20g pine nuts
Method
- Cook the pasta according to the packet instructions
- Meanwhile, in a separate pan, heat the olive oil over a very low heat then add the crème fraîche, pesto, butter beans and nutmeg
- Heat gently, stirring, but don't allow it to boil
- Once the pasta is cooked, drain and return to the pan. Stir in the butter bean mixture to combine
- Serve in pasta dishes, sprinkled with the Parmesan, pine nuts and freshly ground black pepper
