Ingredients

  • 2 tbsp Co-op olive oil
  • 2 Co-op sesame seeded burger buns, cut into cubes
  • ½ tsp mixed herbs
  • 500g Co-op 5% fat British beef mince
  • 1 red onion, thinly sliced
  • 60g Co-op Irresistible
  • Somerset mature Cheddar, grated, plus extra to garnish
  • 100g Co-op 0% fat Greek style natural yogurt
  • 1 tbsp Co-op tomato ketchup
  • 1 tsp Co-op Dijon mustard
  • 2 gherkins, finely chopped
  • Juice of ½ lemon
  • 1 little gem lettuce, chopped
  • 120g pack Co-op watercress, spinach and rocket salad
  • ½ x 330g pack Co-op cherry tomatoes, halved

Method

  1. Heat 1 tbsp of the oil in a pan and cook the cubed buns for 2-3 mins over a medium heat, until crisp
  2. Stir in the herbs, then tip onto a plate
  3. Increase the heat to medium-high, add the remaining oil, and cook the beef and onion for 6-8 mins, until cooked through and slightly crisp
  4. Stir in the grated cheese and season
  5. Mix the yogurt, ketchup, mustard, gherkin and lemon juice together to make a sauce, then season
  6. Toss all the salad leaves with the tomato, then divide between four plates and top with the mince mixture
  7. Drizzle over the sauce, scatter over the extra cheese and top with the croutons to serve
