Ingredients
- 4 Co-op British chicken thighs
- 1 red onion, cut into 8 wedges
- 250g Co-op baby potatoes, halved
- 100g Co-op British cherries
- FROM YOUR STORECUPBOARD
- 1 tbsp Co-op olive oil
- 3 tbsp balsamic vinegar
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Put the chicken thighs, red onion wedges and potatoes in an ovenproof dish
- Drizzle with the olive oil, season and roast for 20 mins
- Turn the potatoes and onions, stir in the cherries and drizzle over the balsamic vinegar
- Roast for 20–25 mins, until the potatoes are tender and the chicken cooked through, then serve
