  • 4 Co-op British chicken breast fillets
  • ½ x 230g pack Co-op Irresistible 6 Air Dry Cured Smoked Back Bacon Rashers
  • 1 tbsp Co-op olive oil
  • 3 Co-op vine ripened tomatoes, halved
  • 2 Co-op little gem lettuces, halved
  • 40g Co-op parmesan wedge, grated
  • 4 tbsp reduced fat mayonnaise
  • 2 Co-op anchovies, drained and finely chopped
  • 1 tsp Dijon mustard
  • 1 tbsp Co-op white wine vinegar
  • Juice of ½ lemon
  • Crusty bread, to serve


  1. Preheat the oven to 200°C/fan 180°C/gas 6
  2. Season the chicken all over and place in a large roasting tray
  3. Add the bacon, drizzle over half the oil and bake for 20 mins
  4. Take the tray out of the oven, toss the lettuce and tomatoes with the remaining oil and place around the chicken
  5. Baste with the juices, then bake for another 15 mins, until the chicken is cooked through
  6. Meanwhile, whisk together the parmesan, mayo, anchovies, mustard, vinegar and lemon juice to make a dressing
  7. Season well and set aside
  8. Remove the chicken from the oven, spoon over the tomatoey juices, then cover and leave to rest for 10 mins
  9. Drizzle over the dressing and serve with crusty bread
