Ingredients
- 1 small red onion, finely sliced
- Juice of 1 lemon
- 40g Co-op walnuts
- ½ Co-op British red cabbage, finely shredded
- 2 small Co-op British Royal Gala apples, finely sliced
- ½ x 25g pack flat leaf parsley,roughly chopped
- 1 tbsp Co-op cider vinegar
- 3 tbsp Co-op extra virgin olive oil
- 2 tsp Co-op pure Canadianmaple syrup
- 40g Co-op Irresistible Blue Stilton®
Method
- Preheat the oven to 180°C/fan 160°C/gas 4
- Put the onion in a small bowl with half the lemon juice and set aside
- Spread the walnuts out on a baking tray and bake in the oven for 8-10 mins, until toasted
- Set aside
- Put the cabbage in a large serving bowl with the sliced apple Roughly chop the walnuts and drain the red onion, then add both to the bowl, along with most of the parsley
- Mix the remaining lemon juice with the cider vinegar, oil and maple syrup
- Season, then drizzle over the salad and toss gently
- Crumble over the blue cheese and scatter with the remaining parsley to serve
