Christmas red cabbage salad


We’ve topped this seasonal red cabbage salad with blue cheese, but you could use any crumbly variety you like

  • 1 small red onion, finely sliced
  • Juice of 1 lemon
  • 40g Co-op walnuts
  • ½ Co-op British red cabbage, finely shredded
  • 2 small Co-op British Royal Gala apples, finely sliced
  • ½ x 25g pack flat leaf parsley,roughly chopped
  • 1 tbsp Co-op cider vinegar
  • 3 tbsp Co-op extra virgin olive oil
  • 2 tsp Co-op pure Canadianmaple syrup
  • 40g Co-op Irresistible Blue Stilton®


  1. Preheat the oven to 180°C/fan 160°C/gas 4
  2. Put the onion in a small bowl with half the lemon juice and set aside
  3. Spread the walnuts out on a baking tray and bake in the oven for 8-10 mins, until toasted
  4. Set aside
  5. Put the cabbage in a large serving bowl with the sliced apple Roughly chop the walnuts and drain the red onion, then add both to the bowl, along with most of the parsley
  6. Mix the remaining lemon juice with the cider vinegar, oil and maple syrup
  7. Season, then drizzle over the salad and toss gently
  8. Crumble over the blue cheese and scatter with the remaining parsley to serve
