  • 300g Co-op spaghetti
  • 1 tbsp Co-op olive oil
  • 3 garlic cloves, thinly sliced
  • 3 spring onions, thinly sliced
  • 200g leftover roast ham, diced
  • 3 Co-op British free range eggs
  • 25g parmesan, finely grated, plus extra shavings to serve
  • 2 tbsp chopped basil, plus extra leaves to garnish


  1. Cook the pasta according to the pack instructions, reserving 200ml cooking water before draining
  2. While the pasta is cooking, heat the oil in a nonstick pan and fry the garlic, spring onions and ham for about 5 mins, until beginning to colour
  3. When cooked, add the drained pasta to the pan and toss to combine
  4. Beat the eggs in a jug with the grated parmesan
  5. Season, then add about 100ml of the reserved cooking water, stirring constantly so it doesn’t scramble
  6. Pour the mixture into the pan with the pasta, stirring constantly to coat
  7. Cook over a low heat for 2-3 mins, until the sauce has thickened and is glossy, but not scrambled
  8. If necessary, add a splash more of the cooking water
  9. Stir through the chopped basil, then garnish with the parmesan shavings and basil leaves to serve
