  • 2 Co-op British chicken breasts
  • 10g flaked almonds
  • 2 tsp Co-op light mayonnaise
  • 2 tsp Co-op fat free Greek style yogurt
  • 2 tsp medium curry powder
  • 2 tsp Co-op mango chutney 1 tsp Worcester sauce
  • 20g Co-op ready to eat dried apricots, chopped
  • Freshly ground black pepper
  • 1 Co-op British little gem lettuce, leaves separated


  1. Put the chicken breasts in a pan, cover with water and simmer with the lid on for 12-15 mins or until cooked through
  2. Set aside until cool enough to handle, shred into bite-size pieces then leave to cool completely
  3. Meanwhile, lightly toast the flaked almonds in a dry frying pan, and mix together the mayonnaise, yogurt, curry powder, mango chutney, Worcester sauce, apricots and some black pepper in a bowl
  4. Add the chicken to the bowl and stir to coat, divide between the little gem leaves, then scatter over the toasted almonds
