Ingredients
- 2 Co-op British chicken breasts
- 10g flaked almonds
- 2 tsp Co-op light mayonnaise
- 2 tsp Co-op fat free Greek style yogurt
- 2 tsp medium curry powder
- 2 tsp Co-op mango chutney 1 tsp Worcester sauce
- 20g Co-op ready to eat dried apricots, chopped
- Freshly ground black pepper
- 1 Co-op British little gem lettuce, leaves separated
Method
- Put the chicken breasts in a pan, cover with water and simmer with the lid on for 12-15 mins or until cooked through
- Set aside until cool enough to handle, shred into bite-size pieces then leave to cool completely
- Meanwhile, lightly toast the flaked almonds in a dry frying pan, and mix together the mayonnaise, yogurt, curry powder, mango chutney, Worcester sauce, apricots and some black pepper in a bowl
- Add the chicken to the bowl and stir to coat, divide between the little gem leaves, then scatter over the toasted almonds
