  • 1 tbsp Co-op olive oil
  • 2 Co-op British leeks,shredded
  • 1/2 tbsp Co-op plain flour
  • 150ml Co-op semi-skimmed milk
  • 1 tsp chilli flakes
  • 1/2 Co-op baguette
  • 1 clove garlic, halved
  • 3 tomatoes, thinly sliced
  • 30g Co-op Irresistible Stilton, thinly sliced


  1. Heat 1/2 the oil in a frying pan
  2. Add the leeks, season and cook gently for 4-5 mins
  3. Stir in the flour then slowly stir in the milk and 1/2 the chilli flakes
  4. Simmer for a few mins until thickened, then set aside
  5. Cut the baguette diagonally into 6 slices Toast
  6. Brush each slice with the remaining oil and rub with the cut end of the garlic
  7. Divide the tomato slices
  8. Stilton and creamed leeks between the baguette slices and sprinkle over the remaining chilli flakes
