
Creamed leek bruschettas

Ingredients
- 1 tbsp Co-op olive oil
- 2 Co-op British leeks,shredded
- 1/2 tbsp Co-op plain flour
- 150ml Co-op semi-skimmed milk
- 1 tsp chilli flakes
- 1/2 Co-op baguette
- 1 clove garlic, halved
- 3 tomatoes, thinly sliced
- 30g Co-op Irresistible Stilton, thinly sliced
Method
- Heat 1/2 the oil in a frying pan
- Add the leeks, season and cook gently for 4-5 mins
- Stir in the flour then slowly stir in the milk and 1/2 the chilli flakes
- Simmer for a few mins until thickened, then set aside
- Cut the baguette diagonally into 6 slices Toast
- Brush each slice with the remaining oil and rub with the cut end of the garlic
- Divide the tomato slices
- Stilton and creamed leeks between the baguette slices and sprinkle over the remaining chilli flakes
