  • 1 leek finely chopped
  • 1 tsp Co-op olive oil
  • 15g Co-op unsalted butter
  • 2 slices wholemeal bread
  • 2 tsp wholegrain mustard
  • 40g Co-op Irresistible Somerset mature Cheddar, grated


  1. Add the leek to a pan with the olive oil and butter
  2. Cook for 5 mins until soft
  3. Grill the slices of bread on one side
  4. Spread 1 tsp wholegrain mustard on the untoasted sides of each slice
  5. Cover the toasts with the leek and then the grated Cheddar
  6. Grill until golden
  7. Season with black pepper
