Creamy mushroom tagliatelle

  • 15g Co-op unsalted butter
  • 2 tsp Co-op olive oil
  • 250g Co-op mushrooms, sliced
  • 3 spring onions, chopped, green tops reserved
  • 1 tsp dried thyme
  • 1 clove garlic, crushed
  • 100ml white wine
  • 200g Co-op fresh tagliatelle
  • 100ml vegetable stock
  • 75g Co-op light soft cheese


  1. Melt the butter and oil in a frying pan, and add the mushrooms, spring onions and thyme
  2. Cook over a medium heat, stirring often, for about 5 mins, until softened
  3. Add the garlic and cook for another minute, then add the white wine and simmer until reduced by half. In a separate pan, cook the tagliatelle according to the pack instructions
  4. Add the stock to the frying pan and simmer for 2 mins
  5. Reduce the heat to very low and stir in the soft cheese
  6. Drain the pasta, toss with the sauce and serve sprinkled with the onion tops
