Goat's cheese and walnut pasta

  • 1 tbsp Co-op olive oil
  • 1 large red onion, finely sliced
  • 1 clove garlic, crushed
  • 1 tbsp fresh thyme leaves (or 1/2 tsp dried)
  • 1 tbsp balsamic vinegar
  • 1 tsp Co-op runny honey
  • 200g penne pasta
  • 65g Co-op British goat's cheese
  • 20g walnuts


  1. Heat the oil in a frying pan, add the sliced red onion, and fry over a medium heat for 3-4 mins
  2. Add the garlic and thyme to the pan and reduce the heat
  3. Cook for 10 mins, stirring occasionally
  4. Add the balsamic vinegar and honey and simmer for 5 mins more
  5. Meanwhile, cook the pasta, following the packet instructions
  6. Drain, keeping 3 tbsp of the water, and return it to the pan
  7. Add the caramelised onions, crumble over the goat's cheese and toss together
  8. Serve sprinkled with walnuts, toasted and roughly chopped, and some freshly ground black pepper
