
Goat's cheese and walnut pasta

Ingredients
- 1 tbsp Co-op olive oil
- 1 large red onion, finely sliced
- 1 clove garlic, crushed
- 1 tbsp fresh thyme leaves (or 1/2 tsp dried)
- 1 tbsp balsamic vinegar
- 1 tsp Co-op runny honey
- 200g penne pasta
- 65g Co-op British goat's cheese
- 20g walnuts
Method
- Heat the oil in a frying pan, add the sliced red onion, and fry over a medium heat for 3-4 mins
- Add the garlic and thyme to the pan and reduce the heat
- Cook for 10 mins, stirring occasionally
- Add the balsamic vinegar and honey and simmer for 5 mins more
- Meanwhile, cook the pasta, following the packet instructions
- Drain, keeping 3 tbsp of the water, and return it to the pan
- Add the caramelised onions, crumble over the goat's cheese and toss together
- Serve sprinkled with walnuts, toasted and roughly chopped, and some freshly ground black pepper
