  • 1 tbsp Co-op olive oil
  • 1 red onion, diced
  • 1 clove garlic, crushed
  • 1 yellow pepper, deseeded and sliced
  • 1 red pepper, deseeded and sliced
  • 1 courgette, thinly sliced
  • 20 Co-op cherry tomatoes, halved
  • 200g Co-op spaghetti
  • 1/2 tbsp mixed dried herbs
  • 1 vegetable stock cube
  • Freshly ground black pepper


  1. Heat the olive oil in a nonstick frying pan and gently fry the onion and garlic for a couple of mins
  2. Add the rest of the vegetables and fry, stirring, for 10 mins on a high heat
  3. Meanwhile, cook the spaghetti according to the pack instructions
  4. Drain, retaining some of the cooking water
  5. Add the spaghetti and dried herbs to the vegetables
  6. Crumble over the stock cube, add a splash or two of the cooking water and stir to combine the pasta and vegetables
  7. Season with freshly ground black pepper and serve
