Ingredients

  • 1 x 280g pack The Tofoo Co. Naked Tofu
  • 1⁄2 360g jar Co-op Irresistible Madras Cooking Sauce
  • 300g bag Co-op Baby Spinach
  • 1 tsp Garam Masala
  • 400g can Co-op Chick Peas drained
  • 2 tbsp Co-op Fat Free Natural Yogurt

Method

  1. Pre-heat the oven to 180°C. Dice the tofu into 5cm cubes and dust with garam masala until completely covered.
  2. Place the tofu on a baking sheet and cook for 10 mins until crispy.
  3. In a large frying pan, gently heat the madras sauce, then add the chick peas and spinach.
  4. Cook for 5 mins until the sauce is cooked through and the spinach is wilted. Add the tofu, toss through then drizzle with the yogurt.
  5. Serve with a side of brown rice (optional) and enjoy!

Meat Eater? Swap the tofu for chicken breast.
Vegan? Swap the yogurt for a coconut alternative.
