Ingredients

  • ½ 280g pack firm tofu, drained
  • ¼ small red onion, coarsely grated
  • 40g Co-op crunchy peanut butter
  • 25g fresh white bread, whizzed into breadcrumbs in a food processor
  • 1 tbsp finely chopped coriander
  • 1 lime
  • 1 ½ tbsp reduced salt soy sauce
  • 1tbsp sriracha
  • 4 tsp sunflower oil
  • 275g pack Co-op ready to cook rice noodles
  • 220g pack Co-op Fairtrade super bright stir fry

Method

  1. Lightly squeeze tofu to remove any excess liquid, then repeat with the grated onion. Crumble tofu into a large bowl until no large clumps remain, add onion, peanut butter, breadcrumbs, coriander, zest of half the lime, ½ tbsp soy sauce and 2tsp Sriracha. Mix well until combined.

  2. In a small bowl, whisk remaining soy sauce, sriracha, juice of half a lime, and 2tsp water. Set aside.

  3. Heat 2tsp sunflower oil in a large non-stick frying pan over a medium heat. Using lightly oiled hands, form the tofu mixture into 6 balls. Flatten slightly and add to the pan, spacing apart. Cook for 3-4 minutes until golden, turn gently and cook for a further 3 minutes.

  4. Meanwhile, heat noodles in microwave/cook according to pack instructions. Heat remaining oil in a wok or frying pan, add stir fry veg pack and cook over a medium heat for 3 minutes, stirring. Add the soy sauce mixture and cook for a further minute. Stir in the hot noodles.

  5. Serve stir fry topped with 2 tofu patties/cakes and a few extra coriander leaves.

TIP: double the ingredients for the patties to make extra patties. They make a great filling for wraps and baguettes or add to a crunchy salad.
