  • 4 tsp mayonnaise
  • 1/2 tsp Dijon mustard
  • 1/2 tsp white wine vinegar
  • 10g grated Parmesan
  • 80g spinach
  • 2 Co-op British free range eggs
  • 2 Co-op Irresistible buttermilk crumpets
  • 2 tsp Co-op tomato & chilli chutney
  • 2 slices Co-op Scottish smoked salmon


  1. Combine the mayonnaise, mustard, vinegar and Parmesan in a small pan, season with freshly ground black pepper then heat gently until the cheese has melted
  2. Put the spinach in another pan with a little water, cook for a few mins until wilted, then set aside
  3. Bring a small pan of water to a simmer and crack in the eggs
  4. Cook for 2 mins, until the whites are set and the yolks still slightly runny
  5. Meanwhile, toast the crumpets until golden, and spread each with 1 tsp of chutney
  6. Divide the spinach between them, top each with a slice of smoked salmon and a poached egg
  7. Spoon the sauce over, season, and serve
