  • 6 Co-op British carrots, peeled and sliced widthways
  • 1/2 tbsp Co-op olive oil
  • 1/2 tsp cumin
  • Co-op 0% fat Greek style natural yogurt
  • 1 tbsp Co-op clear honey
  • Handful fresh mint, roughly chopped, or 1 tsp dried, plus extra to garnish
  • 170g pot Co-op extra virgin olive oil houmous


  1. Heat the oven to 200°C/fan 180°C/Gas 6
  2. Put the carrots in a single layer on a large baking tray, drizzle with the oil and sprinkle over the cumin
  3. Roast for 30 mins, stirring halfway through, until golden
  4. Meanwhile, mix the yogurt, honey and mint in a bowl and season
  5. Spread the houmous on a serving plate, top with the carrot, drizzle with the yogurt and garnish with mint
