Ingredients
- 6 Co-op British carrots, peeled and sliced widthways
- 1/2 tbsp Co-op olive oil
- 1/2 tsp cumin
- Co-op 0% fat Greek style natural yogurt
- 1 tbsp Co-op clear honey
- Handful fresh mint, roughly chopped, or 1 tsp dried, plus extra to garnish
- 170g pot Co-op extra virgin olive oil houmous
Method
- Heat the oven to 200°C/fan 180°C/Gas 6
- Put the carrots in a single layer on a large baking tray, drizzle with the oil and sprinkle over the cumin
- Roast for 30 mins, stirring halfway through, until golden
- Meanwhile, mix the yogurt, honey and mint in a bowl and season
- Spread the houmous on a serving plate, top with the carrot, drizzle with the yogurt and garnish with mint
