
Eggy bread with bacon and cheese

Ingredients
- 6 rashers British dry cured unsmoked rindless back bacon
- 3 Co-op British eggs
- 3 tbsp milk
- 4 slices farmhouse white bread
- 2 tsp oil
- 10g unsalted butter
- 40g Cheddar cheese, finely grated
Method
- Preheat the grill and grill the bacon until just starting to go golden, then set aside
- Crack the eggs into a bowl, add the milk and mix together
- Dip a slice of bread into the egg mixture
- Heat a little of the oil and butter in a heavy based frying pan and fry the bread until golden
- Turn over and fry for another couple of minutes until golden
- Repeat with the other slices of bread and rest all the eggy bread on a baking tray
- Cut the bacon into large pieces and scatter over the bread
- Sprinkle the cheese over the top and grill until melted
- Slice the bread in half diagonally and serve.
