Eggy bread with bacon and cheese

  • 6 rashers British dry cured unsmoked rindless back bacon
  • 3 Co-op British eggs
  • 3 tbsp milk
  • 4 slices farmhouse white bread
  • 2 tsp oil
  • 10g unsalted butter
  • 40g Cheddar cheese, finely grated


  1. Preheat the grill and grill the bacon until just starting to go golden, then set aside
  2. Crack the eggs into a bowl, add the milk and mix together
  3. Dip a slice of bread into the egg mixture
  4. Heat a little of the oil and butter in a heavy based frying pan and fry the bread until golden
  5. Turn over and fry for another couple of minutes until golden
  6. Repeat with the other slices of bread and rest all the eggy bread on a baking tray
  7. Cut the bacon into large pieces and scatter over the bread
  8. Sprinkle the cheese over the top and grill until melted
  9. Slice the bread in half diagonally and serve.
