Ingredients
- 8 Co-op breaded jumbo cod fish fingers
- 3 Co-op baking potatoes, peeled and cut into 2cm chunks
- 4 garlic cloves, thinly sliced
- ½ x 200g pack Co-op British sliced spring greens, finely chopped
- 3 spring onions, thinly sliced
- Pinch of ground nutmeg
- 15g Co-op unsalted butter
- 2-3 tbsp Co-op semi-skimmed milk
- 250g Co-op frozen British garden peas
- 1 lemon, zested and cut into wedges
Method
- Cook the fish fingers according to the pack instructions
- Meanwhile, put the potato and garlic in a pan of cold water, bring to the boil and simmer for 20-25 mins, until soft
- Stir in the greens and cook for 2-3 mins more, until wilted
- Drain and return to the pan, along with the spring onion (reserving a little to garnish), nutmeg, butter and milk
- Mash until smooth, then season
- Cook the frozen peas according to the pack instructions, drain, then stir in the lemon zest
- Serve the spring-green mash with 2 fish fingers per person, along with the peas
- Garnish with the reserved spring onion, then serve with the lemon wedges
