Ingredients
- 150g Co-op basmati rice
- 1 tbsp Co-op olive oil
- 3 Co-op British spring onions, sliced
- 1 garlic clove, sliced
- 120g spring greens, finely sliced
- 100g frozen Co-op peas
- 125g bag Co-op British baby spinach
- 1 tbsp dried tarragon
- Zest and juice of 1 lemon
Method
- Cook the rice according to the pack instructions
- While it’s cooking, heat the oil in a large frying pan and fry the spring onion and garlic for 4 mins, until soft
- Add the spring greens, frozen peas and spinach, and stir fry for 8-10 mins, until tender
- Allow to cool a bit
- Transfer the vegetables to a food processor, add the dried tarragon, lemon zest and juice
- Pulse a few times until you have a coarse paste
- Stir the paste through the cooked rice and serve immediately
