  • 150g Co-op basmati rice
  • 1 tbsp Co-op olive oil
  • 3 Co-op British spring onions, sliced
  • 1 garlic clove, sliced
  • 120g spring greens, finely sliced
  • 100g frozen Co-op peas
  • 125g bag Co-op British baby spinach
  • 1 tbsp dried tarragon
  • Zest and juice of 1 lemon


  1. Cook the rice according to the pack instructions
  2. While it’s cooking, heat the oil in a large frying pan and fry the spring onion and garlic for 4 mins, until soft
  3. Add the spring greens, frozen peas and spinach, and stir fry for 8-10 mins, until tender
  4. Allow to cool a bit
  5. Transfer the vegetables to a food processor, add the dried tarragon, lemon zest and juice
  6. Pulse a few times until you have a coarse paste
  7. Stir the paste through the cooked rice and serve immediately
