Green tea salmon with herby rice

Ingredients

  • 2 Co-op Scottish salmon fillets
  • 1 Co-op Fairtrade green tea bag, steeped in 200ml hot water, then cooled and bag reserved
  • 1 Co-op British leek, sliced
  • 250g pack Co-op microwave wholegrain rice
  • Zest of 1 lemon, juice of 1/2, plus 1/2 cut into wedges
  • Handful flat leaf parsley, chopped

Method

  1. Put the salmon in a shallow bowl and pour over the cold tea
  2. Leave for 5 mins, then remove
  3. Pour the tea and teabag into a saucepan and top up with more water, if needed, to quarter-fill
  4. Set a colander on top so it doesn’t touch the water, add the leek, cover and simmer on a medium heat for 8 mins
  5. Add the salmon to the colander and cook for a further 6 mins, or until cooked through
  6. Meanwhile, cook the rice according to the pack instructions, then stir in the lemon zest and juice, and parsley
  7. Season
  8. Serve the salmon and leek on top of the rice, with the lemon wedges on the side
