Ingredients
- 2 Co-op Scottish salmon fillets
- 1 Co-op Fairtrade green tea bag, steeped in 200ml hot water, then cooled and bag reserved
- 1 Co-op British leek, sliced
- 250g pack Co-op microwave wholegrain rice
- Zest of 1 lemon, juice of 1/2, plus 1/2 cut into wedges
- Handful flat leaf parsley, chopped
Method
- Put the salmon in a shallow bowl and pour over the cold tea
- Leave for 5 mins, then remove
- Pour the tea and teabag into a saucepan and top up with more water, if needed, to quarter-fill
- Set a colander on top so it doesn’t touch the water, add the leek, cover and simmer on a medium heat for 8 mins
- Add the salmon to the colander and cook for a further 6 mins, or until cooked through
- Meanwhile, cook the rice according to the pack instructions, then stir in the lemon zest and juice, and parsley
- Season
- Serve the salmon and leek on top of the rice, with the lemon wedges on the side
