Griddled sweet potato with gremolata


This herby Italian condiment gremolata goes with just about everything

  • 4 large sweet potatoes
  • 2 tbsp Co-op olive oil, plus 1 tbsp for brushing
  • Zest of 1 and juice of half a lemon
  • Zest and juice of 1 lime
  • 2 cloves garlic, crushed
  • Half a 25g pack coriander, finely chopped
  • Half a 25g pack flat leaf parsley, finely chopped


  1. Slice each potato widthways into 0.5cm slices, then brush each slice with a little of the olive oil
  2. Fire up the barbecue or heat a griddle pan over a high heat and cook the sweet potato for 6 mins on each side
  3. You may have to do this in batches, if so, keep the griddled slices warm in the oven
  4. Season to taste and set aside
  5. Meanwhile, to make the gremolata, combine the olive oil, lemon and lime zest and juice, garlic, chopped coriander and parsley in a small bowl
  6. Season to taste and set aside
  7. Lay the griddled sweet potato slices on a platter, season and serve with the gremolata to drizzle over
