  • 3 Co-op oranges, peeled
  • 3 Co-op British carrots, shaved into ribbons with a vegetable peeler
  • 2 tsp Co-op clear honey
  • 2 tsp Co-op wholegrain mustard
  • 120g Co-op lighter halloumi, sliced
  • 80g bag Co-op watercress, spinach and rocket salad
  • 2 tsp Co-op balsamic glaze


  1. Separate the oranges into segments, reserving any juice and removing any white pith
  2. Toss together in a bowl with the carrot, honey and mustard and set aside to infuse
  3. Heat a nonstick frying pan and dry fry the halloumi for 2 mins on each side, or until lightly golden
  4. Gently toss the salad leaves through the orange and carrot mixture, then top with the halloumi and serve drizzled with the balsamic glaze
