  • 280g jar Co-op chargrilled peppers, drained and roughly chopped
  • 1 small red onion, finely diced
  • Zest and juice of 1/2 lemon
  • 2 tbsp chopped mint leaves
  • 250g pouch microwave puy lentils
  • 125g bag Co-op baby spinach
  • 125g pack Co-op British goat’s cheese, torn or cut into chunks


  1. Toss the peppers in a bowl with the red onion, lemon zest and juice, and half the mint, then set aside
  2. Heat the lentils according to the pack instructions
  3. Leave to cool slightly, then stir through the pepper mixture
  4. Gently toss with the spinach, then scatter with the goat’s cheese and remaining mint, season and serve
