  • 1 x 320g pack lamb leg steaks
  • 2 teaspoons oil

For the herb and paprika rub:

  • 1 tablespoon dried thyme
  • 1 tablespoon dried basil leaves
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons ground paprika


  1. Place all the ingredients on a shallow plate and mix well
  2. Heat a non-stick pan until hot
  3. Meanwhile, brush the steaks with the oil all over. Coat the steaks with the rub on both sides and cook for 6-8 minutes on each side, or until any meat juices run clear
  4. Alternatively, cook the steaks under a preheated grill or on a prepared barbecue for the same cooking time
  5. Transfer the steaks to a warm plate and serve with any meat juices from the pan, potato wedges and a green salad
