Ingredients
- 2 baking potatoes
- 250g Co-op low fat natural cottage cheese
- 1/2 x 25g pack Co-op flat leaf parsley, finely chopped
- 1 tsp dried thyme
- 4cm piece cucumber, finely diced
- 1 spring onion, finely sliced
- Zest and juice of 1/2 lemon
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Prick the potatoes all over and bake directly on the middle shelf of the oven for 1 hour 15 mins, until crisp on the outside
- Meanwhile, mix the cottage cheese with the parsley, thyme, cucumber, spring onion, and lemon zest and juice
- Season to taste
- Cut the potatoes open and serve topped with the cottage cheese mixture and an extra scattering of parsley, if you like
