A smoky Spanish twist on the classic jacket potato filling

  • 2 baking potatoes
  • 1 tbsp Co-op olive oil
  • 30g Co-op chorizo, thinly sliced
  • 1/2 red pepper, deseeded and sliced
  • 2 tomatoes, chopped
  • 10g can baked beans
  • 2 tsp English mustard
  • 2 tsp smoked paprika


  1. Preheat the oven to 190℃/fan 170℃/Gas 5
  2. Brush the potatoes with a little olive oil and cut a cross in the top
  3. Place on a baking tray and cook for 1 hour
  4. During the last 10 mins of cooking, heat the rest of the oil in a pan and fry the chorizo and pepper until golden
  5. Stir in the tomatoes, baked beans, mustard and half the paprika and warm through. Season to taste
  6. Cut open the potatoes, spoon in the filling and sprinkle with the rest of the paprika to serve
