Ingredients
- 2 onions, peeled and chopped
- 2 cloves garlic, peeled
- 2 tbsp Co-op olive oil
- 400g can cannellini beans, 400g can butter beans and 400g can kidney beans, drained and rinsed
- 2 tbsp tomato purée
- 400g can Co-op chopped tomatoes
- 300ml vegetable stock
- 1 tbsp wholegrain mustard
- 1 tbsp sugar
- Juice of 1/2 lemon
- For the Texas toasts:
- 2 small Co-op baguettes
- 15g Co-op unsalted butter
- 2 cloves garlic, peeled and crushed
- Handful chopped parsley (optional)
- 125g ball Co-op mozzarella, sliced
Method
- Preheat the oven to 170°C/fan 140°C/Gas 3
- In an ovenproof dish, fry the onions and garlic in the oil for 10 mins
- Add the remaining ingredients and cook in the oven for 1 hour 30 mins, stirring occasionally
- If it looks dry, add more stock
- Meanwhile, cut deep slits into the baguettes.
- Mash the butter, garlic and parsley, if using, and spread into the slits
- Add the mozzarella, wrap in foil and bake for the last 20 mins of cooking
- Serve with the beans
