Ingredients
- 1/2 tbsp Co-op Vegetable Oil
- 100g Co-op Chestnut Mushrooms, thinly sliced
- 2 spring onions, sliced
- 5cm ginger, grated
- 1 red chilli, deseeded and finely chopped
- 50g Frozen Co-op British Peas
- 2tsp Co-op Light Soy Sauce
- 1/2 tbsp Co-op Toasted Sesame Oil
- 1tsp cornflour
- 1/2 250g pack Co-op Fresh Egg Noodles
- 1 small carrot, peeled into ribbons
- 2tbsp chopped coriander
Method
- Heat the oil in a nonstick pan and cook the muhrooms over a high heat for 5 mins or until golden
- Stir in the spring onions, ginger and chilli
- Then cook for 1 minute until fragrant
- Stir in the peas and remove from the heat
- In a large jar, mix the soy, sesame oil and cornflour, before spooning in the noodles and topping with the cooked mushrooms mixture and carrot
- To serve, add 300ml just boiled water, stir well, cover loosely then leave for 2-3 mins before topping with the coriander
