  • 1/2 tbsp Co-op Vegetable Oil
  • 100g Co-op Chestnut Mushrooms, thinly sliced
  • 2 spring onions, sliced
  • 5cm ginger, grated
  • 1 red chilli, deseeded and finely chopped
  • 50g Frozen Co-op British Peas
  • 2tsp Co-op Light Soy Sauce
  • 1/2 tbsp Co-op Toasted Sesame Oil
  • 1tsp cornflour
  • 1/2 250g pack Co-op Fresh Egg Noodles
  • 1 small carrot, peeled into ribbons
  • 2tbsp chopped coriander


  1. Heat the oil in a nonstick pan and cook the muhrooms over a high heat for 5 mins or until golden
  2. Stir in the spring onions, ginger and chilli
  3. Then cook for 1 minute until fragrant
  4. Stir in the peas and remove from the heat
  5. In a large jar, mix the soy, sesame oil and cornflour, before spooning in the noodles and topping with the cooked mushrooms mixture and carrot
  6. To serve, add 300ml just boiled water, stir well, cover loosely then leave for 2-3 mins before topping with the coriander
