Ingredients

  • 1/2 x 250g pack Co-op medium egg noodles
  • 11/2 tbsp crunchy peanut butter
  • 11/2 tbsp soy sauce
  • Juice of 1/2 lemon
  • 1/2 tsp chilli flakes
  • 300ml chicken stock, made with 1/2 stock cube
  • 1/2 tbsp sesame oil
  • 1 clove garlic, crushed
  • 2cm ginger, peeled and chopped
  • 1/2 x 280g pack Co-op British beef steak, sliced into thin strips
  • 1 tbsp dry roasted peanuts, roughly chopped
  • 1 spring onion, sliced into strips
  • 1 lime, sliced into wedges

Method

  1. Cook the noodles according to the pack instructions
  2. Meanwhile, mix together the peanut butter, soy sauce, lemon juice, chilli flakes and chicken stock to make a sauce
  3. Heat the oil in a wok or frying pan and stir fry the garlic and ginger for 1 minute
  4. Add the beef and stir fry for 2 more mins, until just browned
  5. Add the sauce, bring to the boil and cook for another minute
  6. Drain the noodles and divide between 2 bowls
  7. Spoon over the beef and sauce, sprinkle over the peanuts and spring onion, and serve with the lime wedges
