Ingredients
- 1/2 x 250g pack Co-op medium egg noodles
- 11/2 tbsp crunchy peanut butter
- 11/2 tbsp soy sauce
- Juice of 1/2 lemon
- 1/2 tsp chilli flakes
- 300ml chicken stock, made with 1/2 stock cube
- 1/2 tbsp sesame oil
- 1 clove garlic, crushed
- 2cm ginger, peeled and chopped
- 1/2 x 280g pack Co-op British beef steak, sliced into thin strips
- 1 tbsp dry roasted peanuts, roughly chopped
- 1 spring onion, sliced into strips
- 1 lime, sliced into wedges
Method
- Cook the noodles according to the pack instructions
- Meanwhile, mix together the peanut butter, soy sauce, lemon juice, chilli flakes and chicken stock to make a sauce
- Heat the oil in a wok or frying pan and stir fry the garlic and ginger for 1 minute
- Add the beef and stir fry for 2 more mins, until just browned
- Add the sauce, bring to the boil and cook for another minute
- Drain the noodles and divide between 2 bowls
- Spoon over the beef and sauce, sprinkle over the peanuts and spring onion, and serve with the lime wedges
