Add some Asian inspiration to your noodles with this easy satay sauce

Ingredients
- 2 tbsp crunchy peanut butter
- 1 tbsp soy sauce
- 100ml light coconut milk
- 1 tbsp vegetable oil
- 1 red pepper, deseeded and thinly sliced
- 100g Co-op British sugar snap peas
- 265g pack Co-op fresh egg noodles
- 2 heads Co-op British pak choi, shredded
- 1/2 cucumber, peeled into ribbons
- 30g unsalted peanuts, chopped
- 2 spring onions, thinly sliced
Method
- To make the satay sauce, put the peanut butter, soy sauce and coconut milk in a pan and heat gently for 2 mins until well mixed, then set aside
- Heat the oil in a nonstick frying pan or wok and stir fry the red pepper and sugar snap peas for 2 mins
- Toss in the noodles, along with the shredded pak choi and cucumber ribbons, and combine
- Cook for 2-3 mins more, then stir in the satay sauce
- Serve straight away, scattered with the peanuts and spring onions
