Ingredients

  • 2 tbsp crunchy peanut butter
  • 1 tbsp soy sauce
  • 100ml light coconut milk
  • 1 tbsp vegetable oil
  • 1 red pepper, deseeded and thinly sliced
  • 100g Co-op British sugar snap peas
  • 265g pack Co-op fresh egg noodles
  • 2 heads Co-op British pak choi, shredded
  • 1/2 cucumber, peeled into ribbons
  • 30g unsalted peanuts, chopped
  • 2 spring onions, thinly sliced

Method

  1. To make the satay sauce, put the peanut butter, soy sauce and coconut milk in a pan and heat gently for 2 mins until well mixed, then set aside
  2. Heat the oil in a nonstick frying pan or wok and stir fry the red pepper and sugar snap peas for 2 mins
  3. Toss in the noodles, along with the shredded pak choi and cucumber ribbons, and combine
  4. Cook for 2-3 mins more, then stir in the satay sauce
  5. Serve straight away, scattered with the peanuts and spring onions
