  • 2 tbsp Co-op extra virgin olive oil
  • 12 Co-op Jersey Royal pearl potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 100g Co-op Irresistible chorizo, finely chopped
  • 2 tbsp Co-op mayonnaise
  • 1 small garlic clove, crushed
  • 12 Co-op British free range eggs, beaten
  • 2 tbsp chopped flat leaf parsley


  1. Heat the oil in a deep, nonstick frying pan, 20cm across, over a medium heat
  2. Add the potato, onion and chorizo, then fry for 15 mins, stirring occasionally, until softened
  3. Meanwhile, mix the mayonnaise and garlic together and set aside
  4. Increase the heat to high and pour the egg into the pan, swirling until it starts to set around the edges
  5. Reduce the heat to medium-low and cook for a further 20-25 mins, until light golden at the sides but not quite set in the middle
  6. Place a board or large plate over the pan, carefully flip the tortilla onto it, then slide back into the pan
  7. Cook for 3-5 mins more, until the egg has just set in the middle
  8. Sprinkle with the parsley, then serve with the garlic mayo
