Ingredients
- 1 Co-op British parsnip, peeled
- 2 Co-op British carrots, peeled
- 4 tsp Co-op olive oil
- 125g bag Co-op spinach
- 2 Co-op tortilla wraps
- 1 1/2 tsp Co-op hot horseradish sauce
- 60g Co-op low fat soft cheese
- 100g pack Co-op British cooked silverside beef
- 1 tbsp balsamic vinegar
- 1/2 tsp Co-op wholegrain mustard
Method
- Preheat the oven to 180℃/fan 160℃/Gas 4
- Line 2 baking trays with greaseproof paper
- Shave the parsnip and carrots into ribbons
- Toss in half the oil, spread out ribbons on the baking trays and cook for 10 mins, shaking halfway through, until starting to brown at the edges
- Meanwhile, wilt the spinach in a pan for 2 mins
- Squeeze out any excess liquid, then chop
- Spread the tortilla wraps with the horseradish and soft cheese
- Divide the beef and spinach between them, roll up and cut into pinwheels
- Whisk together the balsamic vinegar, mustard and remaining olive oil, and season
- Dress the vegetable ribbons and serve with the beef rolls
