  • 1 Co-op British parsnip, peeled
  • 2 Co-op British carrots, peeled
  • 4 tsp Co-op olive oil
  • 125g bag Co-op spinach
  • 2 Co-op tortilla wraps
  • 1 1/2 tsp Co-op hot horseradish sauce
  • 60g Co-op low fat soft cheese
  • 100g pack Co-op British cooked silverside beef
  • 1 tbsp balsamic vinegar
  • 1/2 tsp Co-op wholegrain mustard


  1. Preheat the oven to 180℃/fan 160℃/Gas 4
  2. Line 2 baking trays with greaseproof paper
  3. Shave the parsnip and carrots into ribbons
  4. Toss in half the oil, spread out ribbons on the baking trays and cook for 10 mins, shaking halfway through, until starting to brown at the edges
  5. Meanwhile, wilt the spinach in a pan for 2 mins
  6. Squeeze out any excess liquid, then chop
  7. Spread the tortilla wraps with the horseradish and soft cheese
  8. Divide the beef and spinach between them, roll up and cut into pinwheels
  9. Whisk together the balsamic vinegar, mustard and remaining olive oil, and season
  10. Dress the vegetable ribbons and serve with the beef rolls
