  • 600g Co-op British Jersey Royal new potatoes, very thinly sliced
  • 1 onion, sliced
  • 2 garlic cloves, finely sliced
  • 1 bay leaf
  • 250ml vegetable stock, made with ½ stock cube
  • 120ml Co-op reduced fat crème fraîche
  • 200g pack Co-op British thick cut mild cured honey roast ham, shredded
  • 220g frozen Co-op British garden peas, defrosted
  • 30g leftover bread, whizzed into chunky breadcrumbs
  • 30g Co-op Parmigiano Reggiano, finely grated
  • 115g pack Co-op babyleaf salad, to serve


  1. Preheat the oven to 180°C/fan 160°C/Gas 4
  2. Put the potatoes, onion, garlic, bay leaf, vegetable stock and crème fraîche in a large pan, over a low heat, and slowly bring to the boil
  3. Simmer gently for 10 mins then remove from the heat
  4. Stir in the ham and peas, then transfer the mixture to a 1.25-litre ovenproof dish
  5. Scatter over the breadcrumbs and cheese, cover with foil and bake for 30 mins
  6. Remove the foil and cook for a further 25-30 mins, until the crust is golden
  7. Serve with the babyleaf salad
