Ingredients
- 600g Co-op British Jersey Royal new potatoes, very thinly sliced
- 1 onion, sliced
- 2 garlic cloves, finely sliced
- 1 bay leaf
- 250ml vegetable stock, made with ½ stock cube
- 120ml Co-op reduced fat crème fraîche
- 200g pack Co-op British thick cut mild cured honey roast ham, shredded
- 220g frozen Co-op British garden peas, defrosted
- 30g leftover bread, whizzed into chunky breadcrumbs
- 30g Co-op Parmigiano Reggiano, finely grated
- 115g pack Co-op babyleaf salad, to serve
Method
- Preheat the oven to 180°C/fan 160°C/Gas 4
- Put the potatoes, onion, garlic, bay leaf, vegetable stock and crème fraîche in a large pan, over a low heat, and slowly bring to the boil
- Simmer gently for 10 mins then remove from the heat
- Stir in the ham and peas, then transfer the mixture to a 1.25-litre ovenproof dish
- Scatter over the breadcrumbs and cheese, cover with foil and bake for 30 mins
- Remove the foil and cook for a further 25-30 mins, until the crust is golden
- Serve with the babyleaf salad
