  • 500g Co-op British 12% fat beef mince
  • 1 tbsp Co-op olive oil
  • 1 onion, finely chopped
  • 1 sprig of rosemary, finely chopped, or 1/2 tsp dried
  • 2 garlic cloves, crushed
  • 2 x 400g cans Co-op chopped tomatoes
  • 1.25 ltrs chicken stock, made with 1 stock cube
  • 10 Co-op lasagne sheets, broken up
  • 20g Co-op Parmigiano Reggiano, grated


  1. Put the mince into a large frying pan over a high heat, and break it up with a wooden spoon for 5 mins
  2. Tip out the fat, then let the meat crisp up and brown for 5 mins more, stirring occasionally
  3. Heat the oil over a medium heat in a large saucepan and add the onion, rosemary and garlic
  4. Stir, then cover and leave to soften on a low heat for 10 mins
  5. Tip the mince into the pan with the onion, then add the chopped tomatoes and stock
  6. Bring to the boil, then simmer for 10 mins before adding the lasagne sheets and cooking for a further 12-15 mins, covered, until the pasta is just cooked
  7. Stir the pan occasionally so it doesn’t stick
  8. Divide the soup between serving bowls, then top with the grated cheese and some freshly ground black pepper to serve
