Ingredients
- 2 tsp Co-op olive oil
- 2 leek, chopped
- 4 British carrots, chopped
- 2 celery stick, chopped
- 2 tsp ground cumin
- 2 tsp paprika
- 2 tsp garlic paste
- 1 x 400g can Co-op cannellini beans, drained and rinsed
- 1 x 400g can Co-op red kidney beans, drained and rinsed
- 1 x 400g can Co-op chick peas, drained and rinsed
- 1kg pack Co-op Italian passata
- Crusty bread, to serve (optional)
Method
- Preheat the oven to 220°C/fan 200°C/gas 8
- Put the oil in a large oven-safe pan over a medium heat
- Once the oil is hot, add the leek, carrot and celery and cook for 5 mins
- Add the cumin, paprika and garlic paste and cook for a further minute
- Add the mixed beans and passata and season with black pepper
- Transfer the pan to the oven and cook for 15-20 mins, until thick and reduced
- Serve with crusty bread, if you like
