  • 2 tsp Co-op olive oil
  • 2 leek, chopped
  • 4 British carrots, chopped
  • 2 celery stick, chopped
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp garlic paste
  • 1 x 400g can Co-op cannellini beans, drained and rinsed
  • 1 x 400g can Co-op red kidney beans, drained and rinsed
  • 1 x 400g can Co-op chick peas, drained and rinsed
  • 1kg pack Co-op Italian passata
  • Crusty bread, to serve (optional)


  1. Preheat the oven to 220°C/fan 200°C/gas 8
  2. Put the oil in a large oven-safe pan over a medium heat
  3. Once the oil is hot, add the leek, carrot and celery and cook for 5 mins
  4. Add the cumin, paprika and garlic paste and cook for a further minute
  5. Add the mixed beans and passata and season with black pepper
  6. Transfer the pan to the oven and cook for 15-20 mins, until thick and reduced
  7. Serve with crusty bread, if you like
