Ingredients

  • 300g Co-op British carrots, peeled and halved lengthways
  • Zest of 1 lemon
  • 2 tsp Co-op olive oil

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Boil the carrots for 5 mins
  3. Mix together the lemon zest and oil
  4. Drain the carrots, toss in the dressing and roast for 10 mins.
