- 300g Co-op British carrots, peeled and halved lengthways
- Zest of 1 lemon
- 2 tsp Co-op olive oil
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Boil the carrots for 5 mins
- Mix together the lemon zest and oil
- Drain the carrots, toss in the dressing and roast for 10 mins.
