
Lime and ginger parkin

A gorgeously sticky cake that harks from northern England — we’ve added a twist with a hint of lime and ginger

Ingredients
- 125g Co-op unsalted butter, plus extra for greasing
- 125g Co-op plain flour
- 2 tbsp ground ginger
- 1 tsp mixed spice
- 75g Co-op porridge oats
- 150g golden syrup
- 70g treacle
- 125g soft brown sugar
- Zest and juice of 2 limes
- 1 Co-op British egg, beaten
Method
- Preheat the oven to 160C/fan 140C/Gas 3
- Lightly butter and line a 20cm square tin with greaseproof paper
- Sift the flour into a mixing bowl with the ginger and mixed spice, and stir in the oats
- Place the syrup, treacle, butter and sugar in a pan and heat gently until the butter has melted and the mixture is smooth and runny
- Pour over the dry ingredients and mix together well
- Fold in most of the lime zest, the lime juice and the egg, then spoon into the tin and level the top with the back of a spoon
- Bake for 1 hour until firm and springy to the touch
- Allow to cool for 20 mins
- Transfer to a wire rack to cool completely, then cut into 8 squares
- Decorate with the leftover lime zest
