Ingredients

  • 125g Co-op unsalted butter, plus extra for greasing
  • 125g Co-op plain flour
  • 2 tbsp ground ginger
  • 1 tsp mixed spice
  • 75g Co-op porridge oats
  • 150g golden syrup
  • 70g treacle
  • 125g soft brown sugar
  • Zest and juice of 2 limes
  • 1 Co-op British egg, beaten

Method

  1. Preheat the oven to 160C/fan 140C/Gas 3
  2. Lightly butter and line a 20cm square tin with greaseproof paper
  3. Sift the flour into a mixing bowl with the ginger and mixed spice, and stir in the oats
  4. Place the syrup, treacle, butter and sugar in a pan and heat gently until the butter has melted and the mixture is smooth and runny
  5. Pour over the dry ingredients and mix together well
  6. Fold in most of the lime zest, the lime juice and the egg, then spoon into the tin and level the top with the back of a spoon
  7. Bake for 1 hour until firm and springy to the touch
  8. Allow to cool for 20 mins
  9. Transfer to a wire rack to cool completely, then cut into 8 squares
  10. Decorate with the leftover lime zest
