  • 300ml Co-op semi-skimmed milk
  • 170g Co-op plain flour
  • 1 Co-op British egg
  • 4 cooking apples, peeled, cored and diced
  • 50g brown sugar
  • 1 tbsp sunflower oil
  • For the sauce:
  • 50g brown sugar
  • 50g Co-op unsalted butter
  • 50g golden syrup
  • 140ml Co-op single cream
  • 1 tsp salt flakes (optional)


  1. Preheat the oven to 140C/fan 120C/Gas 1
  2. Mix together the milk, flour and egg and stand for 20 mins
  3. Meanwhile, place the apple in a pan with the sugar and 2 tbsp water. Cover and simmer for 10 mins
  4. For the sauce, gently heat the sugar, butter and syrup in a pan until the sugar dissolves
  5. Raise the heat, and bubble for 2 mins
  6. Whisk in the cream and bubble for 4 mins more, then remove from the heat, add the salt flakes, if using, and set aside
  7. Use a little of the oil to wipe the base of a 23cm non-stick frying pan, and place on a medium heat
  8. Whisk the batter, and swirl enough into the pan to cover the base
  9. Cook for 2 mins, flip over, and cook for a further minute
  10. Repeat with the rest of the mixture, placing the pancakes in the oven to keep warm as you go along
  11. To serve, divide the apple mixture between the pancakes, roll up, and drizzle with the salted caramel sauce
