Ingredients
- 300ml Co-op semi-skimmed milk
- 170g Co-op plain flour
- 1 Co-op British egg
- 4 cooking apples, peeled, cored and diced
- 50g brown sugar
- 1 tbsp sunflower oil
- For the sauce:
- 50g brown sugar
- 50g Co-op unsalted butter
- 50g golden syrup
- 140ml Co-op single cream
- 1 tsp salt flakes (optional)
Method
- Preheat the oven to 140C/fan 120C/Gas 1
- Mix together the milk, flour and egg and stand for 20 mins
- Meanwhile, place the apple in a pan with the sugar and 2 tbsp water. Cover and simmer for 10 mins
- For the sauce, gently heat the sugar, butter and syrup in a pan until the sugar dissolves
- Raise the heat, and bubble for 2 mins
- Whisk in the cream and bubble for 4 mins more, then remove from the heat, add the salt flakes, if using, and set aside
- Use a little of the oil to wipe the base of a 23cm non-stick frying pan, and place on a medium heat
- Whisk the batter, and swirl enough into the pan to cover the base
- Cook for 2 mins, flip over, and cook for a further minute
- Repeat with the rest of the mixture, placing the pancakes in the oven to keep warm as you go along
- To serve, divide the apple mixture between the pancakes, roll up, and drizzle with the salted caramel sauce
